Every memorable flavor has a story.

Welcome to the titimoon family.

Hello, I'm Somayyeh Dohendou, founder of titimoon.

If you ask me why I have chosen to dedicate my work to a single plant, the answer is simple: golpar has been part of my life for many years.

"Before titimoon was a brand, golpar was part of my life."

To me, golpar (Heracleum persicum) is far more than a spice. It is a distinctive Persian plant with a remarkable aroma, a memorable flavor, and a long-standing place in Persian culinary heritage.

At titimoon, we believe in doing a few things exceptionally well — starting with golpar, and now, natural rock salt and saffron. From careful selection to processing and packaging, every step reflects our commitment to quality, authenticity, and respect for this exceptional plant.

Our mission is simple: to share the true quality of Persian golpar with customers around the world.

"From flower to powder, every grain of golpar is a journey from nature to your table."

An aromatic gift from the nature of Iran.

01 / Origin

Golpar (Heracleum persicum) is a valuable wild plant native to the pristine landscapes of northern Iran, especially its mountainous and forest regions. Growing naturally without industrial cultivation, it follows the rhythm of the seasons and develops its distinctive aroma and character from its natural environment.

In late spring, delicate white golpar flowers bloom, and throughout summer, the seeds slowly mature on the plant. Once fully dried and naturally ripened, the harvest season begins, preserving the unique aroma and quality gifted by nature.

Golpar is more than a spice; it is an aroma that generations have grown up with.

Dried golpar seeds (Heracleum persicum), with their warm fragrance and distinctive flavor, have been an essential part of Persian culinary heritage for centuries. From traditional dishes and pickles to preserves, desserts, beverages, and herbal infusions, golpar adds a unique character and identity to every flavor it accompanies.

Yet the story of golpar extends beyond the kitchen. In Iranian culture, its fragrance has long been present alongside esfand (wild rue) during meaningful moments — celebrations, family gatherings, farewell occasions, and the refreshing of homes with a warm and familiar aroma. For many Iranians, this scent evokes a feeling of calm, purity, and memories passed down through generations.

"Golpar is a connection between nature, flavor, and fragrance — a heritage that is not only tasted, but experienced."
Culinary

Spice & seasoning

A citrus-bitter, faintly nutty seed used across Persian and Middle Eastern cooking — the defining note in ash-e reshteh, on baghali pokhteh, and in advieh spice blends.

  • Whole seed, cracked, or fine milled — dried whole flower also available
  • Bulk packaging sized for buyers who repackage and retail under their own brand
  • Sold bulk or in export-ready retail packaging
  • Suited to spice blenders, specialty grocers, foodservice importers
Traditional Persian Knowledge

In traditional Persian practice, golpar seeds are often lightly toasted in a dry pan before grinding. The brief heat is believed to wake up the seed's aromatic oils, rounding out its sharp, citrus-bitter edge into a warmer, deeper fragrance — the same principle behind toasting cumin or coriander before use. Home cooks typically grind only what they need for the day, since golpar's aroma fades faster once milled.

Aromatic

Perfumery & oud raw material

The seed and flower carry a green, resinous, citrus-forward profile used as a supporting note in fine fragrance and traditional oud blending — supplied as raw dried material for extraction, not as a finished oil.

  • Dried seed and dried flower (umbel) supplied for solvent or steam extraction
  • Sold to fragrance houses, oud blenders, and extraction facilities
  • Lab-testable batches on request

My kitchen, my experiences.

This is where I'll keep adding the dishes I actually cook with golpar — not a fixed menu, but a running, growing journal.

New entries will be added here over time, each one a real dish from my own kitchen and what golpar brings to it.

Sweet and tangy purple cabbage relish with golpar, in a speckled bowl on a wooden table
Entry 01 — Relish

Sweet & Tangy Purple Cabbage Relish

A sweet and tangy relish that combines fresh purple cabbage, natural grape vinegar, brown sugar, and the warm, distinctive aroma of Iranian golpar. A balanced combination of freshness, flavor, and tradition — created to complement Persian and international cuisine.

Ingredients

  • 1 medium purple cabbage
  • 3 tablespoons salt
  • 3 tablespoons brown sugar
  • ½ cup natural grape vinegar
  • 1 teaspoon ground Iranian golpar

Preparing the cabbage

  • Wash the purple cabbage thoroughly and cut it into medium-sized pieces.
  • Place the cabbage in a bowl, add salt, and gently mix until evenly coated. Let it rest for 3 hours, turning it occasionally — this helps create a softer texture and a balanced flavor.

Creating the relish

  • Place the cabbage in a clean cotton cloth and gently press to remove excess moisture.
  • Add grape vinegar, brown sugar, and ground Iranian golpar. Mix gently until the flavors are beautifully combined.

Resting time

  • Transfer the relish into a clean glass jar and refrigerate.
  • After 2–3 days, the flavors will develop and the relish will be ready to serve.

Serving inspiration

This colorful relish pairs beautifully with grilled meats, chicken dishes, sandwiches, salads, and traditional Persian meals. The unique aroma of Iranian golpar brings a memorable character to this simple yet elegant preparation.

What makes a great seed.

05 / Selection & Quality

True golpar quality begins with natural maturity and careful selection. The finest golpar seeds are those that have completed their natural growth cycle on the plant — as the seeds reach full maturity and dry naturally before harvest, their distinctive aroma, character, and natural qualities become fully developed.

Recognizing exceptional golpar is not only about appearance. It requires attention to detail, experience, and an understanding of the qualities that define a truly premium seed.

Our standard

At titimoon, every selection is made with care — focusing on natural maturity, cleanliness, and preserving the authentic character of the seeds, because true quality begins with the right choice.

"True quality is revealed in the details."

The Art of Experiencing Golpar

Some ingredients are used.
Others become an experience.

There is a difference between using an ingredient and truly understanding it.

Golpar reveals its true character through time, patience, and careful selection. Its seeds complete their natural journey on the plant, reaching full maturity before harvest — allowing their distinctive aroma, flavor, and essence to fully develop.

For generations, golpar has been more than a spice in Persian life. It has added depth to traditional cuisine, enriched beverages and herbal infusions, and remained part of familiar moments and cherished traditions.

At titimoon, we believe exceptional ingredients are recognized through knowledge and attention to detail. Because true appreciation begins when we understand what makes each seed unique.
